This Fluffy, Tangy Lemon Pistachio Cake Tastes Like That First 7 pm Sunset

Not to get ahead of ourselves (we’ve been burned before), but the days are getting longer, the temps are warmer, and the sun actually exists. The only appropriate response? Scientifically Sweet’s Lemon Pistachio Cake. Simple enough to make on a weekday (no mixer or fussy trimming required), this soft, tender sheet cake comes together almost entirely in one bowl and is packed with ground pistachios, lemon zest, and olive oil, so it stays impossibly moist for days. Slather it with the whipped lemon cream cheese frosting — and you won’t care that it’s technically still winter.

The Time Commitment: About 40 minutes, plus cooling.

Key Tips: For peak lemonyness, Christina Marsigliese (aka Scientifically Sweet) says to rub the sugar and lemon zest together before adding them to the other ingredients. Also, make sure to bring the egg and dairy products to room temp before baking.

Costa Rica’s Best-Kept Secret Is Hiding on the Osa Peninsula

When it comes to Costa Rica, Manuel Antonio and Arenal get all the attention. But keep going south to the Osa Peninsula — specifically, Drake Bay — and you’ll find the same pura vida vibes, a fraction of the crowds, and beaches the other two can’t match. Sure, getting there takes a bit more effort, but once you arrive, you’ll find it’s part wild coastline, part lush rainforest, and home to some of the most biodiverse terrain in the world. Think: untouched beaches you have to hike to reach, bioluminescent kayak tours under the stars, and wildlife sightings that rival a Planet Earth episode.

🏝️ Corcovado National Park is to Osa what the Colosseum is to Rome or the Eiffel Tower is to Paris — meaning, unmissable. Book a guided tour to hike through lowland rainforests, take a dip in natural swimming holes, and spot wildlife at every turn: four monkey species, Baird’s tapirs (dubbed “living fossils”), sloths, anteaters, and macaws, just to name a few.

☀️ In Drake Bay, even getting to the beach is an adventure. The coastal Drake Trail hike takes a few hours, with plenty of chances to stop at secluded beaches for a picnic or quick dip along the way. The reward at the end? Playa San Josecito — well worth every step. Plus, boat taxis can take you back once you’re beached out.

🤿 If you thought the rainforests and jungles had wildlife, wait until you see what’s underwater. Hop aboard a boat to Isla del Caño — a small, palm tree-lined island with some of the area’s best diving and snorkeling — and you’ll spot vibrant coral reefs, sea turtles, dolphins, stingrays, manta rays, eels, tuna, and, yes, sharks.

🐸 Once you’ve explored by day, see Drake Bay in an entirely different light…literally. Join an evening walking tour of the rainforest to discover glowing fungi, nocturnal animals, and all sorts of jungle sounds. Or, drive to the nearby Golfo Dulce, where you can kayak while bioluminescent plankton light up the water around you.  

🍴 Lunch, not breakfast, is the most important meal of the day in Costa Rica, and the best place to experience it is at a soda — a family-owned restaurant serving traditional dishes. Swing by Soda Mar y Bosque for a casado (rice, beans, plantains, and protein) with fresh fish, plus a revitalizing fruit batido. 

Hotels are fine, but sometimes you just want a full kitchen and no neighbors on the other side of the wall. We’re currently eyeing Whimstay for vacation rentals because the prices are actually competitive, even for last-minute bookings. Go get your privacy.

“This is between them, and not on you to fix. It’s hard when the group is impacted, but give them space to work it out and be a good friend to each of them individually. Tell them both you love them and their friendship is important to you, but keep strong boundaries. It’s uncomfortable, but that’s part of relationships. It could help to focus on other relationships as this simmers and sorts itself out, but avoid catastrophizing. It might blow over or it might not — friendship groups contract and change as we age. Just say you love and support them both.”
