In honor of WeightWatchers’ 60th birthday, we tapped a dynamic mother-daughter duo to share how they’ve built healthy habits while still eating the foods they love with WeightWatchers. ½ cup chopped purple cabbage
½ cup shredded carrot
½ cup red bell pepper, cut into thin strips
½ cup cooked edamame, shelled
½ chopped cucumber
¼ cup fresh radish, quartered
6 large fresh shrimp, cooked
1 Tbsp light mayonnaise
1 tsp Sriracha chili sauce
2 tsp unseasoned rice vinegar
1 tsp toasted sesame oil
¼ tsp fresh ginger, peeled and finely chopped
½ tsp sesame seeds
1 Tbsp uncooked scallions, chopped
6 crushed rice crackers
Step 1: In a large bowl or on a platter, arrange the cabbage, carrot, bell peppers, edamame, cucumber, radishes, and shrimp.
Step 2: In a small bowl, whisk the mayonnaise, sriracha, vinegar, oil, and ginger. Serve the dressing on the side or drizzle over the bowl.
Step 3: Garnish with the sesame seeds, scallion, and rice crackers.
